| Introduction | I am an expat living in China and I love to travel! I was diagnosed with celiac disease in 2007. It was a 3am doctor appointment by phone since my doctor and I were a good 12 timezones apart. I had no idea what gluten was and immediately hopped on the internet and goggled "glutton" by mistake. I desperately hoped the rest of my life wouldn't entail living down the street from Whole Foods and spending 90% of my budget on expensive gluten free foods. Since then I have traversed 3 continents all while maintaining a very strict gluten free diet. If you find yourself, a friend, or family member starting a gluten free diet, please know an adventure is ahead . . . an adventure of amazing food and exotic travel. Anything is possible! |
