| Interests | Lauren Tuttle was officially diagnosed with Interstitial Cystitis in April of 2008. The condition lives up to its nickname well, painful bladder syndrome, and even though the pain can be unbearable, she didn’t want to use any medications. The only other option to dealing with the life-altering condition would be to change her diet. As anyone with IC knows, changing one’s diet to fit within those limitations is one of the most difficult parts of living with the disease. All of the foods Lauren loved, she couldn’t have—even the foods that are so often taken for granted—and eating out with friends was near impossible. She soon started getting creative in the kitchen and realized even with that list of strict diet rules, there are still fun and IC-safe meal options. Lauren’s physical health improved after sticking to the IC diet, but her overall quality of life improved when she started cooking again—she got her passion back. Lauren created a blog, “The IC Chef,” to share her creations and give people suffering from the horrible condition hope and a resource to turn to. |
