Introduction	I am the owner of Shevek & Co. Restaurant in Silver City, NM. I studied at the Culinary Institute of America in the 1977- 1979 and am celebrating 40 years in the restaurant business in 2011. There is nothing else I'd rather be doing! * * * * * * * * * At Shevek & C0. Restaurant we prepare Traditional International Mediterranean & Mediterranean Fusion Cuisines. We are adherents to the Slow Food Movement, serving Local Organic Products and Sustainably & Humanly Raised meats. As part of our Green Commitment, we are members of the SW New Mexico Green Chamber of Commerce. We grow our own herbs, recycle, compost, purchase Energy Star equipment,etc. See the Shevek & Co.
