About me

IntroductionI have been a chef for about 10 years. I am self-taught, having worked my way through several cookbooks. I have taught cooking classes to children and adults, had my own catering business, and been head chef at a gourmet grocery store. I love trying all types of cuisine understanding the underlying principles and science about what makes something great. There is nothing I like more than celebrating food with people. Foods often have too many rules attached. Recently, I’ve been trying to look at food and really understand what it is at it’s core. Once culinary traditions no longer hold sway over a particular food I am amazed at how many other ways to create a similar food. My goal with this blog is to empower home chefs to create original cuisine by demystifying the process. This blog has a simple format: explore the history behind a dish, explain what I believe to be the core components of the traditional dish, find other cultures or recipes that have this dish their own, whenever I am able, give ideas and recipes for completely new versions of the dish, and ask the readers to share their ideas I hope deconstructing these dishes helps give you some good ideas of your own.
