| Introduction | Matt Dunne is the Sydney Morning Herald’s 2011 ‘Good Food Guide Louis Roederer Sommelier of the Year.' Most recently Matt and his team won the 2015 Wine List of the Year in the Good Food Guide for ARIA Sydney. As Group Sommelier for MorSul venues, Matt is in charge of implementation and maintenance of the award winning 1100 bottle wine list at ARIA Sydney and oversees ARIA Brisbane’s 550 bottle wine list and their team of sommeliers. Matt created the wine list at CHISWICK Restaurant in Woollahra, Sydney. This list highlights producers who focus on organic and biodynamic viticulture. Matt also wrote the concise list for new MorSul venture, North Bondi Fish in Sydney and also the CHISWICK at the Gallery wine list. In 2013 MorSul Wine Imports began and now across the MorSul group Matt and his colleagues have sourced wines from Europe that are exclusively available to these venues. |
