| Introduction | Elexis Connally is a Volunteer Services Coordinator at Open Hand Atlanta, where she assists with Social Media initiatives, newsletter articles, and public meetings. She focuses on increasing volunteer participation to meet the environmental need and improve volunteer shifts by strengthening communication with our nutrition department to minimize waste and in turn, maximize volunteer efficiency. She has created nutrition education training materials for spring break programs and assisted in the transition to a new operating system. Elexis graduated with her bachelor’s degree in Food Science and Nutrition from Clemson University in May 2015. After graduation, she traveled to Panama City, Panama for a Culinary Arts internship with the Kalu Yala Institute where she worked to reduce food costs, develop menus with portion sizes and dietary restrictions, and develop a self-heating solar food dehydrator. In the year 2016, Elexis enrolled in the online Applied Nutrition Program at the University of New England. She plans to graduate with her Master’s in May 2019 and continue to obtain a position as a Nutrition Coordinator/Educator. |
| Interests | When she isn't working, you’ll find Elexis relaxing at home, hiking, doing yoga, going to the movies, enjoying great food, or spending time with her friends, family, and four playful dogs. She also enjoys traveling to different areas of the world to visit historical sites and artifacts, eat different native cuisines, and meet new people of different cultures and lifestyles. Her future goal for this year is to travel to see the temples and ruins of Thailand and Cambodia. |
