Introduction	At the age of 19, after showing signs of being a foodie since early childhood, I decided to finish my Journalism degree at the University of Alaska, Fairbanks. My then girlfriend Angela and her 2 young daughters packed up an old Ohio Bell van and homemade trailer with all our worldly posessions and made the 3000 mile drive north from Ohio for our first great adventure. 25 years later, after having another daughter of our own and running a very successful 120 seat restaurant, Two Rivers Lodge, we decided once again to begin a new adventure, this time in warmer climes. In February of 2004, only a year before our daughter graduated from high school, we began looking for a spot for a beachside restaurant. After researching many places via internet, we discovered a place for sale in our price range on a beautiful white sandy beach of Belize. English speaking, British common law and a fairly stable goverment, it seemed like a great place to do business. It had 4 rooms, enough space for us to build a seaside dining area, and was located in the small Garifuna fishing village of Hopkins. This is the blog of everyday life of a foodie and chef in Belize.
