IntroductionMy Southern California upbringing exposed me to people and foods from Mexico. My public school education introduced me to the Spanish language. As an adult, I've lived in Mexico, Colorado, Texas and Oregon, and all of my interests in Latin America, history, Spanish and Mexican food have come together. I teach Spanish full-time at a college in Central Oregon, and use my knowledge of history and food to enliven my lesson plans and classroom presentations. My work and my interests have taken me to Mexico, Spain and Argentina. I have studied each country's history and cuisine while I've been abroad. I usually do homestays when I travel, and all of the women with whom I've stayed have taught me about their national cuisines. I also have the good fortune to be married to a Mexican. His mother was an amazing cook who turned out some delicious meals with limited resources. He is a talented cook, too, having spent nearly 14 years in the restaurant business as a line cook, sous chef, and kitchen manager for large Mexican restaurants. Our mutual interests in health, reading, and cooking have brought us to this project of cooking something Mexican every day, if possible.
