Introduction Diagnosed with Celiac Disease, I embarked on a journey to go gluten-free. I am a researcher by nature and by training. I also have a Master's in Public Health and am Certified in Public Heath. Not everyone likes to do the research; but for those with Celiac Disease and gluten sensitivities, it is important to to be educated. Our whole family has decided to go gluten-free for a couple of reasons. A crumb of gluten-full bread can damage my body, so we hope to decrease the likelihood of my food becoming contaminated unintentionally. One of my sons has speech and social disorders that might benefit from being on a gluten-free diet. While our other son does not have these disorders, it would be cruel for him to eat things his brother can't have. With my research and public health background, I hope this blog can help others!
