| Introduction | Attended Oxnard, CA Culinary school in 2004 and didn't finish, school is for fools. My teacher once told me, that it's not what you know but who you know. Techniques and science is what i gained. I currently work at Alba a new up and coming restaurant in Des Moines, Iowa. Here we are going to be cooking american food with influences of Italian. Recently I have taken up the art Charcuterie, the craft of salting, smoking and curing meats. This is what I will be mastering and creating for the menu. You will be seeing the progress of the restaurant along with charcuterie and new menu items. Still with a young mind and big heart, learning more everyday.
