| Introduction | Hi! I'm Jack Twiss (hence the blog name) I'm 26 and am a self taught ex-chef. I started working in pub kitchens in 2007 as a Commis Chef, I worked my way up to line Chef. I then worked as Sous Chef in a London Gastropub and then as Head Chef in a Suffolk Gastropub. I love to cook food that gives you that "happy belly" feeling, that will always leave you coming back for more even if you're fit to burst! I like food/recipes that don't cost a month's wages on ingredients, or food that needs every kitchen gadget and an art degree to present it. Don't get me wrong- I respect and admire haute cuisine but that's not why I'm writing this blog. I also like to understand the dish and its components so before each recipe i'll provide a little blurb of information (where I can!) Hopefully I'll provide you with good rustic recipes that leave you and the people you cook them for happy!
