IntroductionI spent 8 years working front of house in some of the UK's top hotels and restaurants including Eastwell Manor, Bedford Lodge Hotel, Swinton Park, working alongside celebrity chef Rosemary Schrager and New York Michelin starred chef Wayne Nish. At 28 I made the transition across to the kitchen as Sous Chef at The Anchor Inn at Sutton Gault followed by a longer stint as Head Chef at the White Pheasant, Fordham. During my time at the Anchor Inn I was awarded 'Young Chef of the Year 2006 ~ East Anglia' and came 3rd in the national final, a final that was judged by Michelin starred chef Giorgio Locatelli. I undertook stages at the Dormy House Hotel, Broadway and Bindon House Hotel, Taunton to further my kitchen skills. After my spell at the White Pheasant I moved onto the kitchen of Bedford Lodge Hotel as Senior Sous Chef. At Bedford Lodge I developed new skills but also became confident that my own food was of a 2 AA rosette standard. In April 2009 I moved back out front as F&B Manager of the Cambridge Quy Mill Hotel, in the summer of 2010, I took over the kitchen, within 6 months we achieved 2 AA Rosettes and are now pushing for a Michelin Bib Gourmand.
