| Introduction | I have a 4-1/2 year-old son with autism who has benefited greatly from a strict gluten-free/casein-free diet. In addition to the need to avoid gluten and casein, he also has an extensive list of food allergies (wheat, dairy, eggs, soy, nuts, citrus, turkey, and zucchini) which has further limited our options and made feeding him a challenge. A lot of the store-bought products and mixes I've found are expensive and/or not very good, but I love to cook, so I’m constantly trying out new recipes. Here are the results from some of my kitchen experiments! |
