Introduction	I'm Jess, a vegan transplanted from the east coast to St. Louis, MO. I've been vegan for over two years now and couldn't be happier about my decision. I love cooking, baking, and all things food related (especially peanut butter). You'll also notice that I'm a bit football crazed, and that's where the "Happy Valley Vegan" part comes in. I went to Penn State and spent some of the best times of my life living in Happy Valley. Food and football are my two favorite things. Well, besides my family! I was lucky enough to marry my high school sweetheart back in 2003, and he's still the love of my life! Some of my hobbies are scrapbooking, running, and reading.

If you could peer far enough into the night sky, you'd see a star in any direction you looked. When would you sleep?

Well, I'd be indoors so it wouldn't affect me! :)~
