| Introduction | A graduate student in History at Yale University, my scholarly focus is on new topics in military history. At home in the kitchen, I often think about life during World Wars I and II. How did households adapt to scarcity and rationing? What substitutes did they use and how did government regulations change the way they thought about cooking and eating? How can history help us think about cooking and vice versa? The answers to these questions do not need to be abstract. Much can be learned by trying some of these recipes yourself. Inspired by Alice Waters’ work with the Edible Schoolyard in Berkeley, California, I hope to someday establish an “Eating History” initiative at Yale and in the New Haven area. |
