IntroductionHOME GROWN - HOME MADE. Growing, foraging, cooking and eating seasonal fresh, local and wild Irish food, particularly vegetables from our garden, in the middle of the County Kilkenny countryside, on the fertile site of Nashtown Castle. Making pickles, chutneys and preserves using as much of our own and locally foraged produce as possible. Exploring why we eat what we eat - what we ate both in historic and prehistoric times. What will we eat, in the future, when the vegetable rights police come along? Waste not, want not... Be thrifty...
InterestsGrowing heritage vegetables. Asking the question - What is Irish food? When does an introduced food become Irish? Interested in what we ate in Ireland before we imported and grew South American and other exotic plants (potatoes, tomatoes, maize, chillies etc).
