Introduction	My inspiration for country style cookery comes from the rural landscape in County Meath, Ireland where I live. My home is surrounded by lush green fields on a quiet country boreen. Both my mother and daughter, share my love of home-cooked country food. My kitchen is my “heaven”- the place where I’m at my happiest- cooking evening dinner or “pulling out all the stops” for a traditional Sunday roast dinner or the times when I suddenly get the creative urge to produce a comforting dish right out of my head… As Robin would say, “Mam, you never follow a recipe, you always tweak it..and, yes I do, because I believe you must work with the ingredients you have at hand- that's where real creativity kicks in- what can I use here instead..em?
Interests	Obviously cookery is my number one passion, IT, reading, watching GAA sport, walking in the countryside.
