Introduction My name is Jackie, and I've been cooking my entire life. In fact, my High School guidance counselor said I should be a housewife! Like many of us, I grew up eating a high fat, high calorie diet that wasn't healthy - and contributed to my gaining an unhealthy amount of weight. So I learned to adjust favorite recipes to dramatically cut calories and fat - while keeping all the flavor and satisfaction of a great meal. And it worked! I'm happy to say that I've lost 115 pounds through a combination of good eating habits and regular exercise. I want to share what I've learned about healthy, low fat cooking. This blog is all about making great tasting, satisfying dishes that don't pack on the pounds, or increase cholesterol. So if you think that Enchiladas, Brownies, or Fudge are gone forever on your diet - keep reading! I'll show you how to make these and many other fantastic recipes for you and your family. And no one needs to know that they're really healthy! By the way - I know it's always helpful to see the dish you're preparing - so I'm going to use my other love - photography - to show you how everything should look.
