| Introduction | I'm a single mom and I don't have a lot of time to spend in the kitchen. I worry that my kids are getting enough nutrition, not eating too much fat, getting enough fiber and on and on. I made a personal decision that eating a diet free of animal products was the healthiest way to live. When I started trying vegan recipes, I realized that many of them require way too much time - time I just didn't have or would rather spend with my kids. After countless months of researching nutrition and recipes I'm getting closer to mastering my way around a vegan kitchen. I get constant compliments on my cooking and the kids usually don't complain - which is a compliment in and of itself! :~) |
