Introduction | When I was a kid, every Saturday morning was pancake breakfast in my house. I can remember my Dad letting me add the carefully measured flour, milk, and eggs that created his perfect batter. My father taught me to cook and it became a life long passion. Regarding spices, I learned more about spicing food sitting on mud floors cooking with native women then I learned in culinary school. In 1977, I Joined The Good Earth Restaurant in Boulder, Colorado and spent 12 years developing recipes and opening new stores. I owned my own restaurant, "Natural Juan" in Encinitas California for 4 years. 1997, I was back to Corporate life as Executive Chef for Sedexho /Marriott in Palm Springs In. 2002, I moved to Malibu and successfully cultivated private clients and catering gigs. I have two amazing sons, Lowell and Forrest, both are excellent cooks.Currently in Thailand as chef on Slow Dance Yacht www.sailslowdance.com.
