| Introduction | My culinary expertise has come from over 35 years of cooking…..my hobby; my passion. My kitchen is the place where I collect my thoughts alongside cooking. It is my place of solace where I am most peaceful with myself. Cooking became a hobby when I was 10. Initially, it started with helping my mother in the kitchen (cutting & chopping vegetables, grinding spices, etc) and keenly and closely watching her ways and style of cooking very carefully. Sometimes, I would also try to cook some easy recipes, asking my mother how to go about it. By the time I was 14, I was a mini-expert in cooking. Any dish…. Yes, any dish… be it Indian, Mughlai, Oriental, Continental……. Any….. you name it and voila! there it would be on the table. In the process of cooking varieties, I learnt to mix and match the ingredients (I never liked to follow the old tradition of cooking where some particular spices are used over and over again in mostly all the recipes) as I always like something new; something unique.
