Introduction	After cooking professionally at two of the nation’s top restaurants (Stars in San Francisco, and Fore Street in Portland, Maine), I wanted to know more about authentic cooking traditions from around the world. I started asking immigrants for cooking lessons. To my surprise, nearly everyone I asked said yes. The recipes and stories I discovered were too great to keep to myself, so I created this website.
