Introduction | Again this year I am working with fabulous young chef students in my Culinary Arts & Hospitality program at Monarch Park Collegiate in Toronto. A lucky 16 students make the cut each semester, and I am thrilled to bring these fine students into my kitchen. I will drive them hard, and they will learn quickly about the demands of a professional environment. I'm a full-time high-school teaching chef and co-op teacher at Monarch Park Collegiate. I teach cooking and co-op class now ... in the past I have taught philosophy, comparative religion, history, English, mathematics and biology at Monarch Park. In my career I have taught everything except welding!. A few years ago I did a post-graduate diploma program in Italian cuisine through George Brown Chef School and ALMA (La Scuola Internazionale di Cucina Italiana) in Italy.
