| Introduction | I became vegan in the Summer of 2013 after experiencing what I believe to be stress-induced adrenal exhaustion. After spending three years as a ovo-lacto pescetarian for ethical reasons, I knew it was time to convert to a fully plant-based diet. Since then, my cholesterol has dropped 105 points and I feel better than ever! I do it for the animals and I do it for me! Anyone can do this! I am now a certified vegan lifestyle coach and educator helping others learn how to improve their health and eat more compassionately. In November of 2016, I earned a certificate in Professional Plant-Based Cooking from Rouxbe Cooking School. My profile picture is a depiction of a rescued sheep I had the pleasure of meeting at Farm Sanctuary in Watkins Glen, NY. He is the New Day Vegan mascot and it is for him and others like him that I do what I do. |
