| Introduction | I was raised in a large Irish family. Needless to say, family gatherings of food (and drink...) were a large part of my upbringing. Which is why being diagnosed with Celiac disease could be so frustrating. Gone were the pizza nights, spaghetti dinners and pancake breakfasts. But my passion for food and cooking never vanquished, so I continued to spend time in the kitchen with my mom. Over time, we learned together the wonders of meals sans gluten. As an active person who likes to run races (marathon training anyone?!), cross country ski and spend time chasing my beloved morkie around my condo and neighborhood, I know the importance of healthy eating. But healthy, and gluten-free don't have to be bland and boring, thus, my desire to share fun cooking tips with you. |
