| Introduction | This blog is about amazing food. It is a collection of Ecuadorian recipes. All the recipes come from a real Ecuadorian woman, who has lived in Ecuador her whole life until recently when she moved to the United States and decided to show me all her recipes, my mother. This makes all the dishes here real, 100% Ecuadorian. Ecuador is a very small country situated in South America, in middle of Colombia and Peru. It lies on the Equator which is why this blog is named “Middle of the World Recipes.” The country has four main geographic regions; the Coast, the Highlands, the Amazon and the Galapagos Islands.. Having such a huge diversity in this small land creates infinite varieties of food and dishes. Food in this country is so creative. The different ingredients to the new combinations makes this food irresistible and like nothing you have ever tried before. |
