IntroductionBrenda Fawdon is a chef, restaurateur, cooking school teacher, food presenter and organic food pioneer who has made food her life's work. She has owned and operated 3 restaurants in Brisbane over 30 years. Brenda bought her first restaurant, Primavera in Spring Hill, in 1981, where she cooked provincial Italian and modern European food for the next 11 years. In 1992 Brenda moved to West End and set up The Soup Kitchen Café, a popular avant-garde haven for foodies and artists. In 1999 Brenda developed a new concept, Mondo Organics, a restaurant, catering business and cooking school inspired by a concern about the use of preservatives and genetically-modified additives in everyday foods. Opening in 2000, Mondo Organics was the first licensed organic restaurant in Australia and is committed to educating people about the benefits of eating organic produce and promoting awareness of healthy alternative food choices. In April 2010 Brenda moved to Tamborine Mountain in the Gold Coast Hinterland, where the volcanic soil and temperate climate nurture the best edible gardens imaginable. She is currently transforming her patch of earth into an organic orchard and seasonal kitchen garden.
