IntroductionMy name is John B. Symes, D.V.M. and I am a licensed veterinarian with over 33 years of practice experience. In April of 2000, I discovered that I had been suffering from celiac disease for the better part of my life. For years, I had suffered from allergies, IBS, heartburn, depression, attention deficit, headaches, low pain threshold, sleeping difficulties, and more. By the end of the first month of my new diet, I was a different person. I was stunned and amazed, both as a doctor and a patient. I had to know how the removal of wheat- one of the very staples of our diet- could effect such a miraculous change. I wanted to know all of the details of how this could occur. So...I spent years and years studying the far-reaching effects of food intolerance. I found that there were 4 major culprits: gluten (wheat, barley, rye), dairy products, soy and corn.
