Introduction I LOVE food and I love to cook and bake. I also have a great interest in eating healthy. However, I love food so much I refuse to resort to meals that resemble the taste and texture of cardboard. The one thing that I always said I could never do though is "go vegan." No meat? I can do that. No eggs? I don't know. No cheese? Those are fighting words! No chocolate? NOW THAT IS NO WAY TO LIVE A LIFE!! So how did I decide to begin this vegan experiment? I thought, what if I do not know how GOOD I can really feel? What if I can have more energy to do all the things I want to do and more importantly, all the things God wants me to do? What if that pesky digestive discomfort that the doctors can not diagnose, goes away by my changing the way I eat. So I decided if there is a chance at those things happening AND I can educate myself enough to open up a world of new culinary possibilities, I think it is worth an experiment. At this moment, I am only committing to 6 weeks. From there we shall see. I warn you though. I do not expect this attempted conversion to go peacefully, at least not at first, so expect the first week to contain a few complaints. ;)
