| Introduction | I'm the blogger behind ‘A Mexican Cook in Ireland’, a food blog where I share my Mexican family recipes and my adventures at my Dublin kitchen. I've been living and cooking in Ireland for over 10 years with my husband and business partner, Alan, who happens to be an Irish guy. Together we run ‘My Mexican Shop.ie’, an online shop with everything you need for a Mexican feast at home. When not busy with work, I can be found in the kitchen experimenting with recipes or in the garden growing some food. I have an extensive collection of cookery books and believe one can never have enough kitchen gadgets, you name it, I have it. I am a member of the Irish Food Bloggers Association, and I passionately believe in the Slow Food ethos of good, clean and fair food. I work full-time for an Irish not-for-profit organisation and divide my days between the full-time job, the business and cooking and writing for the blog. Busy bee, I usually find time for a cooking demo or class. I've delivered Mexican food demos at The Dublin Tall Ships Festival, Electric Picnic, The National Ploughing Championships as well as in several cookery schools in Ireland. |
