| Introduction | In Dec 2011 at 24 years old I was diagnosed with Chronic Lyme Disease. This disease makes it nearly impossible to work, keep house, or even get out of bed some days. To top it all off, as part of my treatment I am restricted to fresh, unprocessed, and low-glycemic foods. As a girl who has always loved to cook but mostly specialized in breads and desserts, this change helped introduce a whole new world of food to me. Whether you are a busy career woman or an overworked mom, believe me when I say I can relate to how hard it is to eat healthy when you just don't have the energy to cook. But if I can do it with a debilitating illness, I believe you can too! And now here I am to show you how! |
