The coals have to be just right. The logs will have had to burn for a little while to get past all the wild flames and create bright simmering coals. That is the time for roasting marshmallows. Slow, steady turning until they come to a perfect golden brown. The outer skin will be slightly crunchy but the middle is like warm silk.
