| Introduction | By the Time I finished culinary school and spent several summers working 10-12 hr days 6 days per week, in many different 90 degree kitchens, I was burned out. Having witnessed bad attitudes and all out fights -which culinary is known for- I had seen enough. My experience was witness to degradation of staff by chefs/owners-who had a misconception of management-to a host of self destructive behaviors practically condoned by the industry. I've seen smoking in kitchens, dogs in kitchen, roaches, rats, and I've once seen a cook eat food which had fallen on a disgusting dirty floor. This all lead me to transition out of the kitchen and into more administrative roles within the fickle industry of hospitality. Now, Approaching midlife, I look back to see every restaurant or hotel I have ever worked for closed for business, including a 5 star 4 diamond Property. When I consider all the incredible effort, I and many of my great co-workers, put into these businesses, I’m left with my opening line, -what are we all doing here?- |
