Introduction Indian cuisine is appreciated by vegetarians the world over for it's complex flavors, curries, textures and variety. The drawback - good Indian food takes a long time to prepare. For the working mom, time is the one ingredient that's never at hand. This blog is my attempt to share short-cuts, but it does involve use of store-bought masalas, microwaves and canned / frozen foods. If you're one of those chefs who like to make everything from scratch, this blog probably won't appeal to you :) But if you are a beginner, too busy or just plain lazy like me, these recipes should help put healthy, vegetarian dishes on the dinner table in minutes.
