Introduction I started my journey to create lower calorie/lower sodium versions of wonderful recipes many years ago when I moved to Pleasantville, NY, where I chaired the Gourmet Group of the Pleasantville Newcomers Club. During this time, I was introduced to "Mastering the Art of French Cooking" and fell in love with Julia Child's recipes. For many years I followed Pierre Franey's " 60-Minute Gourmet" column every Thursday in the "New York Times".
