Introduction	It’s about us, Ted & Linda Fondulas, restaurateurs for nearly 35 years, with over 25 years at Hemingway's Restaurant in Killington, Vermont. Here, in the exotic and challenging place we live it is akin to an island, which is why we chose Country/Territory on our blog profile to be “United States Minor Outlying Islands.” There IS a there here. It is this Vermont sense of place that we love. We have been in the restaurant business since we courted back in the early 1970’s, and we have worked together ever since, so really, there is an US here too. Ricotta Diaries is about life in our food related world. “Cooked again” is the loose translation of ricotta, a traditional Italian fresh cheese. As a child of Italian immigrants, I used to eat it regularly. Thus many of these blogs will be memories metaphorically cooked again in recollection.
