IntroductionMargarita C. de Salinas Chef Executive Born in Mexico, into a family with a strong cooking tradition, Chef Margarita originally received a BA in education from the National University of Mexico. She studied cuisine at the Culinary Institute of America and Le Cordon Bleu, among others, as well as with many distinguished Mexican chefs. She has dedicated more than 25 years of her career to researching, studying, teaching and cooking Mexican cuisine. Chef Salinas is also a Chef instructor on the Mexican Cuisine Rescue Workshops with Cucul Cultura Culinaria A.C. and the National University of Mexico, the leader of the Slow Food movement in Baja and country coordinator for the International Association of Culinary Professionals (IACP) since 2001. From 1996 to 2006, Chef Salinas was the Chef of the Ministry of Agriculture in Mexico and has prepared Mexican food festivals and gala dinners in England, Italy, USA, Guatemala, Japan, China, Spain, Mexico, Canada, Holland and others. Along with her husband and three sons Chef Margarita co-owns and is the Executive Chef of Don Emiliano in San Jose del Cabo, Casa Mexico in Mexico City and La Colina in Tokio.
