| Introduction | Nearly thirty years ago, I worked in a fine restaurant in Denver for not quite a year. Since then, I have never wanted to work in another. I am glad for the experience, but I have no desire to reproduce it. Cooking at home is fun--a combination of amateur chemistry, amateur sculpture, and a chance to play with knives and fire.
