Introduction The Story Behind Coconuts: My name is actually Courtney. However, sometimes young children have issues saying my name. Case in point: My friend's 4 year old niece. She genuinely thought my name was "Coconuts." And it stuck. Sometimes my friends can be jerks. But as it turns out, sometimes these very same friends have the most marvelous ideas. I'd kind of thrown around the idea of writing a cooking blog, but hadn't gotten around to it. THEN, my terrifically hot friend said she wanted to start an online newsletter specifically geared towards women, and she wanted to know if I wanted to collaborate. Well, of COURSE I do. I decided to go ahead and start this blog, and eventually, we will link it back to the newsletter. Another pretty important thing to know about me, is that I am planning on getting married fairly soon. Instead of doing a regular (reading BORING) reception, we are having a picnic in the woods. We're are probably going to have falafel and hummus and I'm going to make a ton of desserts. SOOOOO, I have to experiment with desserts until then, so plan on plenty of sweet (literally) recipes.
Interests Cooking of course, baking, creating adorable lunches for the greatest man on earth, playing with all my animals, keeping up with the kids, trying to keep up with the Joneses
Favorite Books I adore Madhur Jaffrey. I have her book "World-of-the-East Vegetarian Cooking" and I have loved what I have tried in it so far.

Q: If you could eat any one thing for the rest of your life, what would that be? A: Easy. Homemade mac and cheese, the southern way. Yum. Q: What made you fall in love with your gorgous, and completely awesome guy? A: His chicken marsala, and his various chili recipes. They are ridiculously wonderful. that combined with his devilishly good looks? I'm hooked.
