| Introduction | Many people know me as the author of the best selling Indian restaurant cook book The Curry Secret, but I love food from just about anywhere in the world. I find the various cuisines of different cultures and nations fascinating. It's not just the diversity of ingredients and cooking techniques that give me such inspiration, but also the similiarities we share in our love of cooking and enjoying food with family and friends. The really important thing for me is that food is fresh and tasty, that is ingredients are grown as they are meant to be - in healthy soils and without toxic chemicals. The flavour of food grown that way is so good compared to the tasteless produce that supermarkets in Australia thrust upon everyone. No cook, however brilliant can disguise bitter tasting vegetables, whereas fresh ingredients with the tastes that nature intended speak for themselves - they don't require great cooking skills. With this kind of philosophy, I'm really lucky to be doing what I'm doing now. Growing much of my own food, cooking it, teaching how to cook it and writing about it. And let's not forget enjoying eating it. It just doesn't get any better than that. |
