| Introduction | I have been disabled 21 years now thanks to a drunk driver. Now at 50 yrs old and the boys long gone from home, a long break from much cooking due to the fact i did think it was worth the bother to cook for 1. To be honest, after my legs and knees an arm an ankle along with other body parts being shattered by someone that had passed out at the wheel.After 8 mo in a wheelchair not knowing if i would ever get up out of a wheelchair and 11 months of the guy that hit me running from the law [ he got only a scratch ONE SCRATCH not even a stitch. The depression i went into was life altering. Along the way i figured god had me here for a reason and slowly crawled out of it. Now 21 years after the fact i am a widow have a knee and hip replaced and have finally started to enjoy cooking agian AND for ONE. Wish my cat liked table food but no she just wants her can of 9 lives beef tidbits [not the ground stuff- oh no not her not a chance] and her dry food dish kept full. Thats ok though the love and affection she gives me along with company she can have whatever she wants. If she only knew lol. I hope you enjoy the recipes i will be coming out with as much as i enjoy sharing them with you. |
