| Introduction | I have a passion or should I say obsession with food. Growing up in an Italian family, there was always a lot of time and energy spent around food. As much as I love Italian food, I recently have developed food sensitives to tomatoes, peppers, eggplants etc. I am sensitive to vegetables in the Nightshade family and also the Cruciferous family. There are other food sensitivities I am still trying to figure out but those are the two biggest offenders. Now this presents quite a challenge for me, since the majority of my diet was tomatoes, peppers, broccoli and kale. Plus my two favorite types of food are Italian and Mexican. The past few years I have been trying to eat a plant based diet. I am not 100% at this point but continually strive to reach that goal. I will be creating recipes that are Sugar, Oil, Salt, Gluten Free and Vegan. I want to thank for wonderful husband for being supportive. |
