| Introduction | Chef, pastry chef, baker, caterer, and culinary arts instructor for over thirty five years, I've inhabited kitchens of many kinds - from restaurants and university to catering and private homes. Currently a chef at Harvard University working nights on a degree in Food Science, for sixteen years I was Chef and Kitchen Manager of Harvard's Signet Society, creating food for five course lunches, high-end dinner parties, and other events. * I am grateful to people from many backgrounds, skill levels, and professions who have enriched my work - especially those I have trained and taught . * My style emphasizes respect for food, quality, and simplicity, and I cook in a range of genres - selecting local, organic foods as often as I can. * I cook and bake to meet special diets - religious, diabetic, gluten free, dairy free, vegan, and so on. * I earned a degree in Culinary Arts, am Serve Safe Certified, a Certified HACCP Manager, and have cooked and managed meals from one to over a thousand. * Twelve years ago, I began Cake Arts, creating organic and special diet wedding and cakes for other occasions. * I donate cakes, consulting services, and teaching skills to non profits. |
