Introduction	Within the last year we discovered I had celiac, hashimotos thyroiditis, gastroparesis, and gastritis, and I've been lactose intolerant for many years. Cooking healthy meals has been a challenge at times, but it's becoming second nature. I'm using this blog to help share what I've learned in hopes of helping others who have to make big adjustments like this.
