Introduction Head chef Franco Caruso found his passion for cooking while living with his father in Calabria, Italy and working at the family wood fired pizzeria by the beach in the small fishing village Cariati.After a great apprenticeship at the 5 Star Hilton International,Glasgow, Franco set his sights on working with some of the best chefs in the UK. Furthering his training and experience in the Michelin starred kitchens of Hywel Jones (Lucknam Park), Martin Burge (Whatley Manor), David Everett-Matthias (Le Champignon Sauvage) and Michael Caines at Michael Caines restaurant, Glasgow.Franco was lured to Melbourne by his Australian wife and now is happily settled, enjoying the Melbourne lifestyle and raising a young family. Always working with the best suppliers and using as much local and organic produced where possible and to create a delicious seasonal menus that lets the produce shine. His ethos is to carry this philosophy on here at the iconic Richmond Hill café and Larder
