| Introduction | The one thing that I was uneasy (sad) about living without when I became a vegan was ice cream. Everything else was easy: milk – give me rice or coconut milk any day; cheese – eh, I can take it or leave it (although every once in a while I do think about feta or brie, but it passes quickly); eggs – I was good once I learned how to make the tofu version… it’s all about the ketchup anyway (I even made a vegan quiche which is quite good). But ice cream… And then I found it. It drew my attention directly towards it and when I laid eyes on it, it was like everything was right with the world and balance was restored: a rice based carrot cake ice cream – come to mama! It was delicious. As a person who enjoys cooking and baking, being a vegan is an adventure – it’s a whole new world. It has it’s challenges, but I know to just roll with it… that and to always have a granola bar or salad or sandwich on hand when I leave the house… just in case. |
