Introduction I grew up in France just outside of Paris, jumped down the culinary “rabbit hole” at a tender age,and have never looked back. Much of my life has been a pursuit of the smells and tastes I remember from childhood (I still recall entire meals from age 7 or 8) Although I’ve worked as a professional chef, a commercial fisherman, and sold seafood and wild foods to the likes of David Waltuck (Chanterelle, NYC), Nobu Matsuhisa (Nobu, NYC, LA), Thomas Keller (while at Checkers, LA), my real passion is teaching traditional cookery, which I’ve been doing for the past 15 years. Using various regional Mediterranean cuisines as a format, I try to weave a connection between history and culture, taste, a common sense approach to nutrition, and the absurdity of an industrial food chain.
