Introduction	Hi! I’m Hélène and I love teaching people how to cook. A lot of people I know want to cook, but are hesitant to wander very far from the narrow path layed out by precise cookbook instructions. Following one of those lists is like cooking blind. You're clinging to somebody else's opinion of how food should taste instead of actually stopping to take a good look at what you're cooking. Pay attention to your food! It will tell you a lot more about what it wants than any cookbook ever could. Smell, touch, sounds and taste are all ways of interacting with whatever it is that you’re cooking to see what it needs at any moment With this in mind, the recipes I upload to this blog are meant more as a guide and inspiration than exact list of instructions. I include lots of hint and tips to guide you towards learning to listen to the food rather than just listening to me. Each of the recipes is meant as a sort of lesson. Soon you'll be such an accomplished chef that you won't need me at all ;-) Unless stated otherwise, all of the recipes on this blog are of my own creation.
