| Introduction | My Mom always said I was French because I ate my salad last as a kid. I enjoyed helping Mom cook and sitting around the table for hours. Mom's from Las Cruces NM. Dad from MD. Mom was career US Govt since WWII, so we had "help" by Miss Daisy Mae from NC. We had country cookin, Mexican. French. Thus I'm a adventurous cook. It dawned on me that I've been "on the road" almost all of my career, taking my meals in restaurants in every corner of the US, Hawaii, and the Pacific Rim. It's only been this past year that I've really been able to hone my cooking and kitchen skills. It takes repetitive practice to cook well, read a recipe correctly, plate artistically, and timing to put it all on the table at one time. It's an art for sure. Alas, like my Mom, I try to produce new or modified recipes from some of the fabulous entrees from great restaurants capturing awesome flavors. I've thrown out many an entree, but I keep trying over and over till I get it down right. I'm sharing some of these recipes in hopes that you also share with family and friends to enjoy.
