Introduction	I am a 22-year old college student who has Celiac disease. I was diagnosed when I was 17 and have been living off other people's cooking. I have finally decided that I want to start cooking for myself, and not microwave dinners. I have two gluten-free cookbooks that I rarely use. I am chronicling my cooking experiences, either for humor purposes or (actual) usefulness.
